“The windy city is for meat lovers,” says Iron Chef winner Tim Love. While in Chicago he heads to The Purple Pig where they specialize in cooking the whole hog. The unique ham steak is cold-smoked with chamomile tea and then seared to perfection with bone marrow custard and charred cabbage. The fried pig ear dish with crispy kale and a sunny-side up egg may sound crazy but Chef Love insists it is a “wonderful marriage of texture and flavor.”
