As the name suggests, the North American Midwest is the inspiration behind Heartland. Chef Lenny Russo sources his ingredients from mainly small family farms and artisanal producers in the U.S. and Canada, so locally raised beef is a given on the burger bar menu. The grass-fed beef burger is composed of a juicy patty that’s simply dressed with just two toppings (housemade ketchup and crispy cornichons), then nestled in a fresh-baked bun and served with either a side salad or beef-fat fries.
