Once called a "fish whisperer," Chef Dave Pasternack has teamed up with Joe and Lidia Bastianich to create Esca, an ode to Southern Italian seafood with an emphasis on simplicity. Esca's sea trout is dressed lightly with crushed almonds. Spaghetti gets a rare treatment: lobster, chilies and mint.
