Specialty Dishes: Mushroom Strudel

Roughly half of America’s mushrooms are grown in Chester County, Pennsylvania, the home of the first commercially cultivated fungi. Seven miles from the mushroom capital — Kennet Square — Hank’s Place is known for its mushroom strudel. They cook cremini, shiitake, portobello and white mushrooms into a rich sauce with cream cheese and savory bits of ham and dried beef. It’s wrapped in a neat phyllo package and baked until golden and crispy. The restaurant is just a mile from the studio of Andrew Wyeth — the American painter most famous for Cristina’s Worldwho used to frequent the corner table.
