Smoked fish is a Wisconsin tradition that dates to native peoples who preserved their catch by slow-cooking it over a smoldering flame. Today, it’s typically eaten plain with crackers or in a cream-cheese spread, and it becomes positively epicurean in the smoked whitefish chowder cooked up at the Island Cafe and Bread Company, a farm-to-table cafe and European style bakery on Lake Michigan’s tiny Washington Island.
