Next, the centerpiece of this meal - beef tenderloin that is literally foolproof. Claire poaches -- yes, POACHES -- her tenderloin low and let's it go. Served with a port wine reduction sauce, it's sure to keep your guests crowded around the dinner table. Don't forget the sides! First, an easy creamed spinach side with a cheesy bite.
