Ice Cream Stuffed Oranges with Caramel Sauce
Weekend Prep Day, Meal #1
- Preheat oven to 400 degrees F.
- Blend sauce ingredients and pour over seasoned chicken breasts in baking dish.
- Bake the chicken. When done, reserve 4 breast halves; 2 for meal #2, 2 for meal #3. Label and refrigerate.
- Boil red potatoes for meal # 1 tonight.
- Chop 1 red onion, 1/4 cup for meal # 1 tonight, 1/2 cup for meal # 2. Label and refrigerate.
Meal # 2
- Microwave tortillas to soften.
- Pull chicken and red onions labeled meal #2 from refrigerator, shred chicken.
- Combine all quesadilla filling ingredients except cheese.
- Put about 1/2 cup filling into each tortilla. Then top with 1/4 cup cheese.
- Fold over each quesadilla and cook until golden brown.
- To jazz up the canned tomato soup, add salsa and garnish with sour cream, scallions, and tortilla chips.
- Slice the quesadilla into wedges.
- Eat and Enjoy!
Meal # 3
Weeknight Dessert
- Microwave caramel sauce in jar till warm.
- Hollow oranges, reserving sections for garnish.
- Stuff oranges with ice cream, drizzle with caramel sauce, and garnish with oranges sections, add granola and mint if desired.
