Chicken Coop Shopping List

NOTE: Total amounts needed for certain ingredients are stated in parentheses, just in case you already have these items in your kitchen and do not need to buy them.

STAPLE PANTRY ITEMS (Always make sure you have these staples on hand - these are essential ingredients you should always need.)
Salt, preferably kosher
Ground black pepper
Oils (extra-virgin or virgin olive oil, corn, vegetable)
Jar preminced garlic
Cooking spray

PRODUCE
6 small or 4 medium red potatoes, halved (or quartered if potatoes are slightly bigger)
3 ripe tomatoes (1 1/2 cups diced)
1 large or 2 small red onions (1/4 cup minced plus 1/2 cup chopped)
1 bunch fresh thyme leaves (1 tablespoon chopped) or 1 teaspoon dried
1 package sliced mushrooms or 1 package whole (1/2 cup sliced)
1 bunch scallions (1/2 cup chopped plus 2 teaspoons sliced)
1 head or 1 bag Romaine lettuce (4 cups chopped)
1 cucumber (1 cup diced)

FRUITS
2 limes (2 tablespoons juice)
2 oranges

MEATS, POULTRY & SEAFOOD
8 (5-ounce) skinless chicken breast halves (with bone)

PANTRY GOODS (herbs, spices, breadcrumbs, seeds, oils, nuts, canned goods, etc)
Orange marmalade (1 cup)
Reduced-sodium soy sauce (2 tablespoons)
Sesame oil (2 teaspoons)
Liquid smoke (1 teaspoon)
Pitted Greek (kalamata) olives (1/2 cup)
Red wine vinegar (1 tablespoon)
1 jar water packed roasted red peppers (1/2 cup sliced)
1 jar water packed artichokes (1/2 cup sliced)
4 cups prepared tomato soup (from can or jar)
Prepared salsa (1/2 cup)
Reduced-sodium chicken broth (1 cup)
Smooth peanut butter (2 tablespoons)
Caramel sauce (4 tablespoons)
Dry roasted peanuts (1/4 cup)
Granola (optional - to top ice cream filled oranges)

CHEESE & DAIRY
Monterey Jack or pepper jack cheese (1 cup shredded)
1 small container sour cream (4 tablespoons)
1 pint vanilla ice cream
