Meal #1
Upside Down Sausage and Mushroom Pizza

  • In a large saute pan, add: sauce, sliced mushrooms, sliced onions and season with salt and pepper. Cook until soft.

  • In a medium bowl, whisk together: eggs, milk, and olive oil.

  • Then add all-purpose flour and salt. Set aside.

  • Add to the sausage pan: pasta sauce and sliced black olives and bring to a simmer.

  • Remove the sausage mixture from the heat and place into a baking dish.

  • Top with mozzarella cheese, prepared batter and sprinkle with Parmesan.

  • Place into preheated oven and bake until golden brown.

  • Remove the pie from the oven and allow to rest prior to cutting.

  • Cut and place pizza onto a serving plate. Enjoy!

Meal #2
Spicy Wok-Seared Shrimp

  • Cover cellophane noodles with hot water and allow to soak for about 10 minutes.

  • In a wok or skillet over medium-high heat, add: peanut oil, minced ginger, minced garlic, large or jumbo shrimp and cook until pink.

  • Meanwhile, whisk together: reduced-sodium chicken broth, reduced-sodium soy sauce, cornstarch and crush red pepper flakes.

  • To the shrimp pan, add the broth mixture and cook until the shrimp are cooked through and the sauce thickens.

  • Drain the cellophane noodles and place into serving bowl.

  • Serve half of the shrimp over the cellophane noodles garnished with chopped scallions. Reserve the remaining shrimp for the Shrimp Cakes. Enjoy!

Meal #3
Shrimp Cakes with Grain Mustard Remoulade

  • In a medium bowl, combine: chopped reserved shrimp, mayonnaise, seasoned dry bread crumbs, salt and pepper, to taste, 1 egg, and chopped chives.

  • Shape mixture into 4 cakes, each about 1 inch thick.

  • Place the shrimp cakes onto a greased griddle and cook on each side until browned and cooked through.

  • Meanwhile, in a small bowl combine the mayonnaise and grain mustard.

  • Remove the finished cakes from the griddle and place onto a platter, topped with spoonful of Remoulade. Enjoy!

Strawberry Daiquiri
  • Add to a blender and puree: ice cubes, light rum, Triple sec, fresh strawberries and lime juice.

  • Rub the rim of a glass with lime.

  • Roll the glass in sugar.

  • Garnish with lime wedges.

  • Taste and enjoy!
