Meal #1
Pork Chops in Creamy Wine Sauce with Rustic Garlic Mashed Potatoes

  • Season pork loin chops with salt and pepper, to taste and add to a large skillet over medium-high heat with oil. Cook on both sides until golden brown.

  • In a medium saucepan, add: medium red potatoes, garlic cloves and enough water to cover them. Cook until the potatoes are fork-tender.

  • Remove the seared pork chops from the skillet and add to the chopped shallots to the same skillet. Once they are soft, add the chopped thyme, chopped tarragon and white wine.

  • In a small bowl, whisk together the flour and milk. Add this milk mixture to the pan along with the pork chops. Simmer until the pork is cooked through and the sauce thickens.

  • Drain the potatoes and return to the saucepan.

  • Add the sour cream and mash. Next, stir in chopped parsley, salt and pepper, to taste.

  • Place 4 of the pork chops on a serving platter with all of the sauce and the mashed potatoes. Reserve the remaining pork chops for the Fried Rice. Enjoy!

Meal #2
Halibut with Anchovy-Stuffed Olives, Red Peppers and Oregano

  • Season the halibut fillets on both sides with salt and pepper. Next, add the fillets to a large heated skillet with oil. Cook on both sides until golden brown.

  • In a medium bowl, combine: diced roasted red peppers, anchovy or jalapeno-stuffed olives, vermouth or dry white wine, pre-minced garlic, chopped oregano and add the mixture to the pan. Simmer until the fish is fork-tender.

  • Place the fish onto the serving platter, top with the sauce and garnish with basil. Enjoy!

Meal #3
Crispy Pork Fried Rice

  • In a large skillet over medium-high heat, add: peanut oil, chopped onions, minced ginger, minced garlic, diced reserved pork chops and season with salt and pepper, to taste.

  • In a small bowl, combine the reduced-sodium soy sauce and sesame oil. Add this mixture to the skillet.

  • Also add to the skillet, cooked rice and cooked scrambled eggs.

  • Place the mixture into a serving dish. Garnish with chopped cilantro and eat!

Bay Breeze Bliss
  • Fill a rocks glass with ice cubes.

  • Next, pour in your vodka, cranberry juice, pineapple juice, and pineapple chunks.

  • Stir with a straw and taste.
