GAMEPLAN:
Meal #1 Thanksgiving Meal
Roast Turkey with Apple-Sourdough Bread Stuffing
Garlic and Celery Root Mashed Potatoes with Sautéed Wild Mushrooms with Spinach
- Season and roast turkey.
- While turkey is roasting, prepare stuffing. Bake stuffing in oven with turkey.
- Remove stuffing from oven. Remove turkey from oven and allow to rest.
- While turkey is resting, boil potatoes and celery root.
- While potatoes are simmering, sauté mushrooms and spinach.
- Mash potatoes and celery root. Remove mushroom spinach mixture from the heat.
- Plate turkey, stuffing, masked potatoes and mushrooms. Serve warm and enjoy!
- Reserve portion of turkey and mashed potatoes for Meal #2.
Meal #2
Turkey Shepherd's Pie with Leftover Mashed Spuds and Simple Mixed Green Salad with store-bought dressing
- Sauté all ingredients for Shepherd's Pie.
- Transfer the mixture to a baking dish and top with reserved mashed potatoes. Bake pie until golden and warmed through.
- Serve Shepherd's Pie with bagged green salad and store-bought dressing.
- Enjoy!
Weeknight Dessert
Espresso Cakes with Pumpkin Filling and White Chocolate Curls
- Place cakes on serving plates.
- Pour brewed espresso onto cakes. Top cakes with pumpkin pie filling.
- Garnish with white chocolate curls and serve.
