Meal #1
Slow Cooker Chipotle-Lime Braised Chicken Thighs

  • Whisk together the tomato sauce, lime juice, minced chipotles, sauce from chipotles and minced garlic.

  • In the bottom of a slow cooker place the sliced onion, chopped celery, chopped carrots.

  • Season the chicken thighs with salt and pepper and place over the vegetables.
    Pour sauce over the vegetables, cover and cook.

  • Serve half the chicken thighs with rice for this meal and reserve the rest for Meal #2 Chicken-Green Chili Straws with Jalapeno-Honey Dip.

  • Top chicken with diced avocado, chopped cilantro and lime wedges. Enjoy!

Jamaican Rice and "Peas"
  • In a medium saucepan combine the instant rice, coconut milk, water, red beans, dried thyme, lime zest. Bring to a simmer. Reduce heat to low, cover and simmer.

  • Stir in scallions and season with salt and pepper.

  • Serve with chicken thighs.
  • Meal #2
    Chicken-Green Chili Straws

  • Combine the reserved chicken thigh meat, sour cream, shredded Mexican cheese blend, diced green chilies, chopped fresh cilantro and cumin.

  • Place filling in egg roll wrappers and roll.

  • Place onto baking sheet and bake.

  • Remove from oven and serve with dip and slaw. Enjoy!

  • Jalapeno-Honey Dip
  • Combine the honey chopped pickled jalapenos and cider vinegar and serve with straws.

  • Jicama-Citrus Slaw
  • Combine the mayonnaise, sherry vinegar, mandarin orange liquid from can, mandarin oranges, jicama, shredded red cabbage and toss with salt and pepper. Serve with straws.

    Slow Cooker Moroccan Beef Brisket with Red Onions and Apricots

    • In the bottom of a slow cooker add onion and parsnips.

    • In a bowl combine ground coriander, ground cumin, ground cinnamon, garlic powder and nutmeg.

    • Season both sides of the beef brisket with salt and pepper. Rub with spice mixture.
      Place beef over vegetables.

    • Arrange the apricots around the beef.

    • Combine the red wine, beef broth and honey and pour over beef.

    • Cover and cook.

    • Serve beef, vegetables, apricots and extra sauce over couscous.

    • Garnish with chopped cilantro and serve with couscous. Enjoy!

    • Couscous
    • Cook couscous according to directions.
