Meal #1
Grilled Chicken with Spicy Ginger Vinaigrette

  • In a large, heated skillet over medium-high heat, add: prepared cole slaw mix and sodium-reduced soy sauce. Cook until wilted.

  • Season chicken breasts with salt and pepper and place onto preheated grill. Grill until cooked through.

  • Spoon the wilted cole slaw mixture into the middle of wonton wrappers. Pull up the sides and pinch the middle together to make a purse.

  • Add purses to heated oil and cook until the bottom is golden brown.

  • Once the purses are browned, add reduced-sodium chicken broth and cook until the purses are tender and translucent.

  • In a small bowl, whisk together: rice wine (mirin), vegetable or olive oil, wasabi paste, hot mustard (not powder), and grated fresh ginger.

  • Remove the chicken from the grill and place 4 onto a platter. Reserve the remaining chicken pieces for Chicken Stroganoff for later in the week.

  • Pour the vinaigrette over the chicken and serve alongside the beggar's purses. Enjoy!

Meal #2
Grilled Shrimp with Citrus Dipping Sauce

  • Season shrimp with salt and pepper, to taste, and place onto preheated grill. Grill until bright pink and cooked through.

  • Meanwhile, in a small saucepan, whisk together: orange juice, fresh lime juice, cornstarch, and garlic powder and simmer until mixture thickens. Once thickened, add grated ginger. Season sauce and place into serving bowl.

  • Remove the shrimp from the grill and place 2/3 onto a serving platter. Reserve the remaining for the Mediterranean Shrimp Wraps for later in the week.

  • Garnish shrimp with cilantro and serve alongside the Citrus Dipping Sauce. Enjoy!

Meal #3
Chicken Stroganoff

  • To a large heated skillet, add: chopped onions, chopped mushrooms, thyme leaves, cubed reserved chicken breasts and red wine. Simmer for about 1 minute.

  • Meanwhile, in a small bowl, whisk: low-sodium chicken broth, cornstarch, and Worcestershire sauce and add to skillet. Allow to simmer until the mixture thickens.

  • Pour the Stroganoff over cooked egg noodles and garnish with chopped chives. Enjoy!

Meal #4
Mediterranean Shrimp Wraps

  • Spread prepared basil pesto over 1 side of 4 tortillas.

  • Top with: baby spinach leaves, reserved diced shrimp, chopped artichoke hearts, and chopped sun-dried tomatoes.

  • Roll up and place onto serving platter. Enjoy!
