Pear Pizza with Ricotta, Apricot Preserves and Granola

Weekend Prep Day, Meal #1

  • Preheat oven to 400 degrees F.

  • Slice strawberries and make cumin-mixed berry sauce.

  • Chop parsnips.

  • Remove pork loin from fridge and separate one-third of pork from entire loin.

  • Transfer both pieces of pork to roasting pan and arrange parsnips alongside.

  • Season parsnips and pork with salt and ground black pepper.

  • Spread cumin-mixed berry sauce over larger cut of meat.

  • Bake pork and parsnips in oven.

  • Remove pork from oven and let rest.

  • Prepare sautéed snow peas.

  • Slice one-third of pork roast with cumin-spiked mixed berry sauce and serve alongside snow peas.

  • Divide remaining two-thirds pork for meals #2 and #3. Label and refrigerate.

Meal #2

  • Soak radicchio in ice water to crisp up if desired.

  • Boil water. Add rice and spices. Cover.

  • Remove shredded pork labeled meal #2 from fridge.

  • Peel and slice grapefruit into thin rounds.

  • Thinly slice red onion and sprinkle over grapefruit.

  • Assemble and dress grapefruit and onion salad.

  • In a big skillet, reheat pork with pre-shredded carrots, etc.

  • Combine rice with carrot- pork mixture in skillet. Add soy sauce.

  • To assemble, spoon rice and pork mixture into radicchio cups.

  • Serve alongside with soy sauce for dipping.

  • Eat and Enjoy!

Meal #3

  • Trim green beans and sauté with butter, salt, and pepper in a skillet.

  • Make pineapple salsa using pre-diced pineapple (from salad bar or can).

  • Remove sliced pork labeled meal #3 from fridge.

  • Coat pork with chili rub and sear in pre-heated skillet.

  • Add sliced almonds to green beans to toast.

  • Plate seared pork and green beans.

  • Serve and Enjoy!

Weeknight Dessert

  • Preheat oven to 400 degrees F.

  • Heat apricot preserves in microwave.

  • Remove packaged pie crust from fridge and unroll onto a baking sheet.

  • Spread ricotta cheese onto pie crust.

  • Slice, core, and fan pears onto pie crust, brush pears with apricot glaze.

  • Bake pizza in oven until crust is golden brown.

  • Remove pizza from oven and sprinkle with your favorite granola and garnish with mint, if desired.

  • Slice and Enjoy!
