Meal #1
5 Ingredient Bacon Burgers with Cheddar and Red Onion with Parmesan Popcorn Black-Eyed Peas
- In a large bowl, combine ground beef, crumbled bacon, salt, pepper and mix. Shape into 4 patties and place onto preheated grill and cook on both sides.
- In a large skillet, add olive oil and black-eyed peas and cook until golden brown. Season with salt and pepper, remove from heat and stir in Parmesan and parsley.
- Grill the onions alongside the burgers.
- Add the cheddar on top of burgers and cook until cheese is melted. Place on top of Kaiser rolls with the onions, shredded lettuce and tomatoes. Serve the burgers alongside the peas and enjoy.
Meal #2
5 Ingredient Sauteed Chicken and Broccoli Rabe with Black Olives, Sun-Dried Tomatoes, and Feta Cheese
- In a large skillet, add oil from sun-dried tomato jar, diced chicken, salt and pepper, to taste, sun-dried tomatoes, broccoli rabe, olives, pasta water and season again with salt and pepper. Cook until chicken is cooked through and the broccoli rabe has wilted.
- Place the chicken mixture over the cooked capellini in a serving platter. Garnish with feta cheese and parsley. Taste and enjoy!
Meal #3
5 Ingredient Pan-Seared Halibut with Artichoke Hearts and Saffron Broth
- In a large skillet, add olive oil and halibut fillets, which have been seasoned with salt and pepper, and cook until golden brown both sides.
- To a small saucepan with add chicken broth and heat. Once heated, add the chopped artichoke hearts and saffron and allow to simmer to infuse flavors.
- Add the saffron broth to fish pan and simmer until fish is cooked through.
- Remove fish into platter and re-season broth, if necessary, and pour over fish and garnish with parsley, chives, or other green herbs.
Meal #4
Banana Cream Pie Parfaits
- In a blender, combine vanilla yogurt, banana, vanilla extract and blend until smooth.
- In tall glasses, add half of crushed cookies. Next, top with half of the banana mixture. Then add the remaining crushed cookies and remaining banana mixture. Top with whipped cream and sifted cocoa powder. Enjoy!
