Bruschetta with Tomatoes and Fried Capers

Meal #1
Grilled Chicken Breasts with Fire-Roasted Tomato Sauce

  • Season chicken breasts with salt and pepper. Place into oven and roast.

  • Serve 4 breasts with this meal, reserving the rest for another meal.

  • Top with the tomato sauce and serving with the roasted zucchini.

  • Roasted Zucchini with Oregano
  • Arrange zucchini and tomatoes on same baking sheet. Season with salt and pepper.

  • Sprinkle with lemon zest, lemon juice and oregano. Place into oven and roast.

  • Reserve half the zucchini and 8 tomatoes for another meal.

  • Place the roasted tomatoes, balsamic vinegar, hot sauce and chili powder in a blender and process.

  • Serve with zucchini and chicken. Enjoy!

Meal #2
Penne Rustica

  • Cook penne according to package directions. Drain and transfer to a large bowl.

  • Add to bowl reserved cooked chicken, artichoke hearts, reserved zucchini, roasted red pepper, sun-dried tomatoes, reserved roasted tomatoes, green olives and chopped basil.

  • Season with salt and pepper and garnish with cheese. Enjoy!

Meal #3
Braised Clams in Parsley Broth with Peas

  • Saute shallots and garlic.

  • Add white wine, clams and chicken broth.
  • Remove clams and add parsley and butter and simmer.

  • Place peas into microwave and steam.

  • Serve peas and bruschetta on the side with the clams.

Bruschetta with Tomatoes and Fried Capers
  • Saute capers and drain.

  • Toast baguette slices and top with capers and tomatoes.

  • Serve alongside with peas and clams.
