SASSY SPIN MENU:

Day 1
Seared Steaks with Bourbon-Thyme Pan Sauce
Rice Pilaf with Cranberries and Almonds

Day 2
Cheese Steak Egg Rolls with Ranch Pepper Rings

Day 3
Clams with Toasted Breadcrumbs and Orange Zest over Angel Hair

Meal #1
Seared Steaks with Bourbon-Thyme Pan Sauce

  • Season steaks with salt, pepper and thyme.

  • Add steaks to the pan and sear. Add bourbon and broth and simmer.

  • Remove steaks and set on platter, reserving 2 for another meal.

  • Stir in cornstarch and beef broth and simmer.

  • Remove from heat and stir in chopped parsley and salt and pepper. Serve with rice.

  • Rice Pilaf with Cranberries and Almonds
  • Add to saucepan chicken broth, instant brown rice, almonds, dried cranberries and garlic and herb seasoning and cook.

  • Serve with steak and enjoy!

Meal #2
Cheese Steak Egg Rolls with Ranch Pepper Rings

  • Saute onion.

  • Thinly slice reserved steaks.

  • And add steak to pan.

  • Top spring roll wrappers with steak, onions, cheese and roll up.

  • Place onto baking sheet.

  • On another baking sheet place peppers.

  • Coat with ranch dip mix.

  • Place both baking sheet into oven and bake.

  • Remove from oven and enjoy!

Meal #3
Clams with Toasted Breadcrumbs and Orange Zest over Angel Hair

  • Cook angel hair to al dente and drain, reserving 1/2 cup liquid.

  • Add to skillet, drained canned clams, chicken broth, diced red onion and zest and simmer.

  • Toast breadcrumbs in a separate pan.

  • Add reserved pasta liquid to clam skillet.

  • Pour clam mixture over pasta and top with toasted breadcrumbs and enjoy!
