Meal #1
Grilled Chicken with Honey-Mint Dressing with Green Apple-Parsley Salad with Bacon
- Season the chicken breasts with ground cumin, salt and black pepper, to taste. Place the seasoned chicken onto the preheated grill and grill until cooked through.
- In a small bowl, whisk together: plain yogurt, honey, chopped mint and set aside.
- In another small bowl, whisk together: cider vinegar, olive oil and Dijon mustard.
- Core and dice Granny Smith apples and add to a large bowl. Next add the dressing to the bowl and toss to combine. Crumble sliced cooked bacon over the top, season with salt and pepper, to taste, and set aside.
- Remove the chicken from the grill and slice.
- Serve 4 of the chicken pieces with all of the salad and top with yogurt sauce. Reserve the remaining chicken for the Greek Pizza for later in the week. Enjoy!
Meal #2
Crab Ceviche with Cucumber and Jicama with Garlic-Rubbed Grilled Bruschetta
- Brush grilled bread with clove of garlic and set aside.
- To a large bowl, combine: lump crabmeat, canned tomato sauce, lime juice, Worcestershire sauce, hot sauce and salt and pepper, to taste. Place into a serving platter and set aside.
- To another large bowl, add: diced Roma tomatoes, diced cucumber, diced jicama, diced white onion, and chopped cilantro.
- Place the grilled bread onto a platter and top with the tomato mixture. Serve alongside the ceviche and enjoy!
Meal #3
Greek Pizza with Chicken, Feta and Olives with Mixed Cherry Tomato Salad
- Place rolled out dough onto a baking sheet.
- Top with mozzarella cheese, garlic flakes, diced reserved chicken, sliced mushrooms, sliced kalamata olives, crumbled feta cheeses, and dried oregano.
- Place the pizza into the oven and bake until the crust is golden brown and cheese has melted.
- In a medium bowl, combine: halved red cherry or grate tomatoes, halved yellow cherry tomatoes and chopped basil leaves.
- In a small bowl, whisk together: red wine vinegar, olive oil and Dijon mustard. Add the mixture to the tomatoes and toss to combine. Season, to taste, with salt and pepper and set aside.
- Remove the pizza from the oven and slice. Serve alongside the salad and enjoy!
Spiced Rum Rickey
- In a tall glass, muddle the lemon slices, lime slices and sugar.
- Add ice, rum and club soda to the glass.
- Mix using either a straw or stirrer and taste!
Weeknight Dessert
Banana Empanadas
- Roll out pie crust on a flour dusted surface.
- In a large bowl, combine: sliced bananas, light or dark brown sugar, ground cinnamon and mix well.
- Using a ring mold, make circles in the dough.
- Put the banana mixture on the pie dough and place another round on top.
- Pinch around the edges of each section to seal.
- Transfer the empanadas to the prepared baking sheet and make slits in the top of each one to allow steam to escape.
- Place the baking sheet into the preheated on and bake until crust is golden brown.
- Remove the baking sheet from the oven and place the empanadas on a platter.
- Serve with ice cream or sprinkle with powdered sugar. Enjoy!
