Weekend Prep Day

  • Preheat oven to 400 degrees F.

  • Prepare crepe batter for meal #1 and refrigerate for at least a half an hour (optional).

  • Prepare omelet fillings for meal #3, including tomatoes, bacon, mushrooms, green pepper, green onions, and cheese. Assemble omelet kit and refrigerate.

  • Cook crepes and layer between wax paper to cool. Seal and refrigerate.

Meal #1

  • Preheat oven to 200 degrees F and reheat crepes for about 10 minutes.

  • Sauté Chorizo-Leek filling for crepes.

  • Heat oil in pan for Wilter Swiss Chard. Wash, chop, and sauté Swiss chard. Garnish with roasted soy nuts.

  • Roll up reheated Crepes with Chorizo-Leek filling and garnish with sour cream and chives.

  • Plate and enjoy!

Meal #2

  • Preheat griddle or large skillet over medium-high heat.

  • Prepare egg mixture to coat sandwiches.

  • Assemble, dip, and fry sandwiches.

  • Plate and enjoy!

Meal #3

  • Heat oil in a large skillet for Loaded Omelets.

  • Beat and season eggs.

  • Cook eggs and fill with desired omelet toppings.

  • Plate and enjoy!
