Meal #1
Chicken with Buffalo Sauce and Blue Cheese Dip
- Pat chicken breasts dry and brush with hot chili oil. Season chicken breasts with salt, chili powder and black pepper and roast.
- In small bowl, combine sour cream and blue cheese.
- Serve with 4 chicken breasts, sweet potatoes and celery sticks. Enjoy!
- Slice eggplant into rounds. Peel and wedge sweet potatoes. Place both on same baking sheet. Spray with cooking spray, season with salt and pepper and roast.
- Serve with chicken and reserve roasted eggplant for another meal.

Meal #2
Pan-Seared Calamari with Spicy Marinara over Linguine
- Cook linguine to al dente and drain.
- Saute garlic and calamari in skillet. Add pasta sauce, crushed red pepper flakes and cook until calamari is tender.
- Remove 1 1/2 cups tomato sauce from skillet and reserve for another meal.
- Spoon remaining sauce and calamari over linguine. Garnish with basil and serve.
Meal #3
Roasted Stuffed Portobellos
- Combine 2 reserved chicken breasts, diced, frozen chopped broccoli, diced sun-dried tomatoes, oil from jar, and breadcrumbs.
- Remove stems from Portobello caps and place on baking sheet. Fill each cap with chicken mixture and roast.
- Remove from oven and serve with greens. Enjoy!
Meal #4
Neapolitan Eggplant Parmesan
- Arrange reserved eggplant rounds on a baking sheet.
- Top with reserved spicy pasta sauce and cheeses and bake.
- Remove from oven and top with chopped fresh basil. Enjoy!
