Meal #1
Slow Cooker Ginger-Soy Short Ribs

  • For the sauce, mix together the beef broth, sherry, soy sauce, honey, vinegar, ginger and garlic.

  • Chop carrots and leeks and place in the bottom of the slow cooker.

  • Top vegetables with short ribs and top with sauce and cook.

  • Green Rice with Lime
  • Cook rice according to directions.

  • Add to rice, when cooked, chopped cilantro, chopped scallions, pickled jalapenos and lime zest. Season to taste with salt and pepper.

  • Serve half of rice with the ribs, reserving the other half for another meal. Enjoy!

Meal #2
Vegetarian Paella

  • Saute sausage and garlic.

  • Add asparagus, squash, zucchini, carrots, artichoke hearts, frozen green peas, diced tomatoes, saffron, paprika, bay leaves and simmer.

  • Add reserved rice and broth to pan and cook.

  • Remove from heat and stir in chopped parsley and season with salt and pepper.

  • Serve and enjoy.

Meal #3
Slow Cooker Split Pea Soup with Chorizo

  • Place into slow cooker: diced sausage, diced carrots, sliced leeks, sliced celery, green split peas, broth, garlic, bay leaves and cook.

  • Remove bay leaves, season with salt and pepper and serve with bread.

  • Quick Fix Beer Bread
  • In a large bowl combine the flour, sugar, baking powder, baking soda and salt.

  • Make a well and add beer and olive oil.

  • Pour into loaf pan and bake.

  • Remove from oven cut and serve with soup. Enjoy!
