GAME PLAN:

Meal #1
Morning Prep:

  • Chop vegetables for Slow Cooker Beef with Root Vegetables. Layer in slow cooker with beef on top.
  • Chop onion, green pepper and celery for Slow Cooker Jambalaya, Meal #3. Store labeled in fridge for later in the week.
  • Whisk together Slow Cooker Beef sauce, pour over beef and vegetables.
  • Turn on slow cooker and go about your day.

Dinner time:

  • Blend together Quick Roasted Red Pepper Dressing. Spoon dressing over pre-washed lettuce greens.
  • Slice 1/3 of the beef, place on serving platter with root vegetables.
  • Shred remaining beef for Meal #3, Asian Beef Lettuce Wraps. Store labeled in fridge for later in the week.
  • Enjoy!

Meal #2
Morning Prep:

  • Place frozen cooked shrimp in refrigerator to thaw by dinnertime.
  • Place pre-chopped veggies in slow cooker. Layer with chicken, Andouille sausage and sauce ingredients.
  • Turn on slow cooker and go about your day.

Dinnertime:

  • Boil water for fast cooking rice. Add rice.
  • Fold cooked shrimp into hot Jambalaya while still in slow cooker to heat thru.
  • Serve Jambalaya over rice and enjoy!

Meal #3

  • Boil water for couscous. Measure dry couscous into serving bowl with seasonings.
  • Saute bagged shredded cabbage and carrots. Add pre-shredded cooked beef reserved from earlier in the week to heat through. Mix in remaining ingredients.
  • Pour boiling water over couscous. Cover.
  • Spoon cabbage beef mixture into lettuce leaves.
  • Fluff couscous, serve with beef lettuce wraps.
  • Weeknight Dessert:

  • Place frozen yogurt in microwave to soften.
  • Saute frozen strawberries in a pan to partially defrost.
  • Empty yogurt into a mixing bowl, gently swirl in berries.
  • Scoop into bowls, top with pistachio nuts and enjoy!
