Sesame Red Curry Chicken with Bok Choy and Sweet Coconut Rice
- Cut vegetables for 3 meals
- Add vegetables, chicken, prepared sauce to slow cooker and turn on
- Chop vegetables for 2 other meals
- Prepare jasmine rice with coconut milk, add toasted coconut
- Serve chicken over rice with vegetables and cilantro garnish
- Eat and Enjoy!
Meal #2
Chicken Mojito with Roasted Asparagus with Almonds
- Put seasoned asparagus on baking sheet and into oven
- Make couscous
- Sautee all ingredients for chicken
- Sprinkle almonds over asparagus and return sheet to oven
- Add sauce and mint to chicken
- Plate chicken over couscous with asparagus on the side
- Eat and Enjoy!

- Add all soup ingredients to slow cooker and turn on
Weeknight Dessert
Sweet Coconut Rice with Candied Ginger- Combine all sweet coconut rice ingredients and simmer
