Meal #1
Tuna in Tomato-Tarragon Broth
- In a large heated skillet, add olive oil and tuna fillets, which are seasoned on both sides with salt and pepper, cook until golden brown.
- Cook rice according to package directions.
- In a medium bowl, combine reduced-sodium chicken broth, tarragon, tomatoes, shallots and add mixture to skillet and bring to a simmer.
- Remove 4 fillets onto a serving platter and finish sauce with butter and top sauce onto fish and rice.
- Remaining fillets will be reserved for tuna melts.
Meal #2
Chicken with Green Curry Sauce
- In a large heated skillet, add chicken, which have been seasoned with salt and pepper on both sides, and cook until golden brown on each side.
- To a pot of boiling water, add 1 cup of couscous and turn off heat.
- In a medium bowl, whisk together coconut milk, green chiles, curry powder, masala, ground cumin and add mixture to chicken pan and bring to a simmer.
- Place couscous on top on a serving platter, add chicken and sauce on top and garnish with cilantro.
Meal #3
Tuna-Pesto Melts on Rye with Romaine Salad with Candied Walnuts and Grapefruit
- In a medium bowl, combine broken tuna fillets, basil pesto, roasted red peppers, mayo, Parmesan, salt, pepper and spoon mixture onto bread slices, top with Swiss cheese and place under broiler until cheese melts.
- In a small bowl, whisk together olive oil, rice vinegar, Dijon mustard, salt, pepper and dress on top of Romaine lettuce leaves, grapefruit segments, and candied walnuts.
- Remove tuna melts from broiler and serve with salad.
Meal #4
Frozen Yogurt with Cinnamon-Spiked Blueberry Sauce
- In a medium saucepan, combine blueberries, confectioners' sugar, cinnamon, and bring to a simmer until sauce thickens.
- Into dessert bowls, scoop frozen vanilla yogurt and top with blueberry sauce.
