Edible Flags

Wow your guests by presenting your appetizers in the shape of the flags of the countries you're rooting for in this year's summer games! 

Greece:

Jeff used black grapes and feta cheese to create the stripes and cross on the Greek flag, but you could use any dark blue/purple and white foods. We sliced blocks of feta into 1-inch pieces and lined them up to create the rows of the flag. In between the rows of cheese, we served rows of whole black grapes to mimic the blue stripes of the flag. Serve alone or with crackers. 

Mexico:

Marcela created the 3 stripes of the flag using guacamole, queso blanco and red salsa. Make the components yourself or use store-bought ingredients. Spread the guacamole over one-third of the plate, then cover the next third with queso blanco and the rest of the plate with salsa. To create the emblem in the middle, we used a paring knife to cut an eagle out of a whole-wheat tortilla (or use a cookie cutter). To finish it off, we used a scallion as a snake in the eagle's mouth and jalapenos to mimic the cactus it is standing on.

America:

Sunny created the red and white stripes of our American flag out of store-bought Buffalo wings and blanched cauliflower. We made stripes out of the flats of the wings (not the drummets) because they lay flatter on the plate; however, feel free to use both. We blanched our cauliflower before adding it to our flag to make it a bit less crunchy, but you could serve it raw. To add the stars, we crumbled blue cheese into small pieces about the same size and lined them up on a blue plate that covers the top corner of our flag.

Brazil:

Katie created a cocktail station out of the Brazilian flag. She covered the bottom of a plate with green banana leaves to make the green area more vibrant. Start with the center of this flag. We used a bowl of acai with white sprinkles to mimic the blue circle and constellation in the center of the flag. For the yellow diamond around it, we sliced pineapple into 1-inch cubes and placed them in a diamond shape around the bowl. For the remaining green area of the flag, we sliced limes into quarters and placed them over the banana leaves around the outside of the pineapple. We chose these fruits based on their color, so use any of your favorite green, yellow and blue fruits. Then serve as mix-ins to a cocktail or as a fruit tray!
