Tip #1 How to keep bacon crispy when using it to wrap other foods

  • Pound out the bacon to thin it out and help it cook evenly and become crispy faster. We like to put bacon in a plastic baggie or sandwich it between 2 sheets of plastic wrap and flatten it out with the palm of our hand.
  • Par-cook the bacon by microwaving it for 1 to 3 minutes before using it to wrap foods; this will ensure it cooks through and crisps up faster. Par-cooked bacon is stiffer than raw bacon, so use toothpicks to secure it to food when wrapping.

Tip #2 How to work with sticky rice paper wrappers at home

  • Use the steering wheel method so that the rice paper becomes pliable but never gets saturated: Hold the rice paper wrappers like you would a steering wheel (with 2 hands) and dip the edges in a bowl of room-temperature water while constantly rotating the rice paper. This will allow the water to move from the outer part of the wrappers to the center without submersion.
  • Let the wrappers sit for 15 to 30 seconds.
  • Fill with your favorite fillings. We like to save time by buying pre-shredded veggies.
  • Tuck and roll tightly.

Tip #3 How to make freezer-friendly burritos

  • Don't use ingredients that have a high water content or that you don't want to eat warm/hot. Burrito ingredients that freeze well include: cooked meat (beef, chicken, pork, sausage), rice and beans (canned and drained or refried), shredded cheese, potatoes (sweet and regular) and crumbled tofu. Pro tip: mix the rice and beans together before you add to the burritos for a better texture. Burrito ingredients that don't freeze well include: tomatoes, lettuce, salsa, sour cream, avocado and guacamole.
  • Start building your burritos with room-temperature ingredients; hot ingredients will create steam inside the burritos, causing an undesired texture and freezer burn. The one exception to the room-temperature rule is the tortillas. You want to use tortillas that have been slightly warmed so they are pliable.
  • Assemble your burritos as desired and roll tightly.
  • To store: wrap first in parchment paper and then in foil.
  • To heat: remove the foil and microwave in the parchment paper until warmed throughout, 2 to 3 minutes.
  • Serve with fresh ingredients such as salsa, sour cream and guacamole.
