Watermelon Snacks from Food Network Star Finalists

The three finalists of Food Network Star joined The Kitchen in a friendly competition to demonstrate their favorite poolside watermelon snacks. Here are their recipes.

Jay Ducote's Mock Caprese Skewers: Thread a small ball of mozzarella (also called bocconcini), a basil leaf and a small cube of watermelon on a skewer; drizzle with balsamic vinegar simple syrup (made from vinegar and sugar that have been simmered together until thick).

Eddie Jackson's Watermelon Salsa: Toss together 2 cups finely chopped watermelon, 1/2 seeded and finely chopped jalapeno, 1/4 finely chopped small red onion, 1/4 finely chopped bunch cilantro and juice of 1/2 lime. Season to taste.

Dom Tesoriero's Watermelon Mint Rounds: Slice watermelon into thick rounds, then cut out 2-inch rounds with a cookie cutter or small glass. Use a melon baller to scoop out shallow wells and fill each with some balsamic reduction (made from balsamic vinegar that's been simmered until thick and syrupy) and a mint leaf. You can pop this in the freezer to make it extra refreshing!
