Weekend Prep Day/Meal #1
- Marinate and grill Jamaican Jerk Flank Steak for meal #1.
- Slice onions and green peppers for Steak Fajitas, meal #2, and slice onion for the Philadelphia Cheese Steaks, meal #3.
- Sautee Pearl Onion and Snap Pea side dish for tonight's meal.
- Slice steak. Serve 1/3 for dinner tonight.
- Cover and label remaining steak in 2 separate containers for meals #2 and #3. Label and refrigerate with sliced veggies.
- Plate and enjoy!
Meal #2
- Remove Steak Fajita meal kit from fridge.
- Whisk together fajita marinade, toss ingredients and saute till vegetables are tender crisp.
- Make no-mess fresh guacamole.
- Heat tortillas.
- Plate and enjoy!
Meal #3
- Preheat oven to 400 degrees F.
- Remove Philadelphia Cheese Steak meal kit from fridge.
- Place steak, onions and cheese on sliced rolls, wrap with foil and bake.
- Stir together Wasabi Ketchup.
- Slice tomatoes. Assemble with basil leaves and drizzle with balsamic vinegar, oil and salt.
- Plate and enjoy!
Weeknight Dessert
- Heat blackberries in a small saucepan. Add cornstarch to thicken and simmer.
- Cube pre-made angel food cake.
- Place cake cubes in bowls and top with sauce.
- Enjoy!
