Surprise!

The recruits may have mastered putting out one plate of food but they are still a far cry from being able to cook for their families. This week's challenges teach them how to cook quantity — first rolling sushi for a hungry lunch rush via conveyor belt and then catering a huge party for surprise guest Betsey Johnson.

Producing Quantity with Quality

Bobby and Anne welcome the recruits to a Japanese restaurant where they will be making sushi rolls for a packed lunch crowd in their first team vs. team challenge. The purpose of the test is "to see how you guys can do in quantity," says Anne. Bobby advises them to be precise, because the diners will "expect very good-looking plates."

Setting Aside Her Fears

Anne and Bobby demonstrate California rolls and spicy salmon rolls, which both teams must produce. As Anne begins to take apart a crab, Amber worries about how she's going to get through: "I got attacked by an octopus when I was, like, way young, so seafood freaks me out completely." She'll have to get over her aversion quickly if she wants her team to succeed.

Red Team Pep Talk

Carol is tasked with slicing the salmon, but she's never cut fish before and is making her pieces too big. Anne tells her, "Remember, they have to go inside the rolls," and Carol concedes that she "feel(s) like a fish out of water swimming upstream." Meanwhile, Jamie is taking too long picking at the crab, so Anne reminds him the challenge is about both quantity and quality: "It's OK if you sacrifice a little of the perfection for volume."

Blue Team Is Nearly on a Roll

As the conveyor belt starts up, the Blue Team is in a rush. Amber is having trouble getting her sushi to roll nicely. "You guys, this is not working. Everything's falling out. This looks like a sea murder scene." So Danielle takes over: "All right, guys. I'm giving it a shot." Her first roll comes out better than she expects. The team is the first to get food out on the conveyor belt.

Missing a Key Ingredient

Bobby and Anne go in for a taste of the Red Team's salmon roll and Bobby notices something's missing: "They forgot the tobiko." Carol admits to forgetting the fish eggs, even though they're so hard to miss given that they’re bright orange. Luckily, though, Bobby thinks "the California roll's good."

Finding the Right Balance

Anne and Bobby gather the recruits to reveal their scores. For quantity, the Red Team scored the highest. The Blue Team earned the most points for presentation, and they also earned the highest for quality, making them the winners. Before anyone can celebrate, Anne hints at the following day's challenge, where there will be "some more practice involved when it comes to making food for more than one person."

Surprise, It's Party Time!

It's time for a party, but it won't be all fun and games. For their Main Dish challenge, the recruits will have to cater a surprise birthday party hosted by fashion designer Betsey Johnson for her daughter Lulu and 30 guests. Since there are only a few weeks left of Boot Camp, "the recruits need to be ready for any surprise that we send their way," says Anne.

Inspiration Can Come from Anywhere

There's a catch: The recruits won't be replicating Anne's and Bobby's hors d'oeuvres, but instead they'll be coming up with their own versions, inspired by candies they'll have to get at by fighting lifelike Bobby and Anne pinatas. Anne asks, "All right, who on my team wants to beat me up?" Bobby adds, "I know you guys want to."

Group Therapy Session

Carie volunteers for Team Red and Stephanie steps up for Team Blue, both taking it out on the pinatas. The candies are unlabeled, so their palates will be put to the test in determining the flavors they must use in their dishes. "It tastes, like, orange-y a little bit," says Stephanie of her candy, but she's not too pleased: "I have to put orange in a spring roll?"

For Presentation's Sake

"I never knew how much work went into stuffing a spring roll." says Carie. "I thought it was just grease." Her flavor inspiration is also orange, but she's worried about her presentation, so she's using purple cabbage for "a bright color." Carie also has ground turkey cooking for her stuffed mushrooms, which Anne inquires about. Meanwhile, Mike is farther ahead on rolling his spring rolls.

Hitting You Over the Head with Flavor

Danny takes the flavor inspiration from his honey candy to the extreme: "I'm putting a little honey here. I'm putting a little honey there. ... I want Bobby to taste the freakin' honey." For his second appetizer, he's filling piquillo peppers with sour cream and sausage. Bobby suspects it's "not going to be a good surprise."

Picking Up the Pace

Carol, as usual, is flustered, and can't seem to get a rhythm going: "I'm feeling overwhelmed, and as a result, I feel like everything is slow-motion or almost frozen in time." Anne sees her struggling and comes over to whip her into shape: "Hurry up! Whatever you do, Carol, do it fast." Carol has to finish making enough for 30 guests.

Delivering the Goods

At the party, Danny talks up his spring rolls to all the guests: "There's, like, a hint of something that I want you guys to figure out." Anne and Bobby will need to decipher the flavor inspiration. Upon tasting the dish, Bobby knows right away it's honey. "You used way too much of it," he tells him. Even so, Danny ends up winning the challenge for the Blue Team.

Praise for Being on Point

Anne and Lulu stop by Jamie's station. Anne praises the spring rolls for being uniform, and upon tasting one, immediately identifies the secret flavor as basil. "The chicken's very moist," adds Lulu. "You are very much heading in a good direction here," Anne tells him. Jamie ultimately wins the challenge for the Red Team.

One-Note Wonder

Danielle serves up her lemon candy-inspired spring rolls filled with shrimp, cabbage and carrots. Unfortunately, Bobby can't taste the flavor inspiration. "At this point, there should be no flat food on this team," he tells her. "It's like it's one-note." But on the flip side, her piquillo peppers are a hit with Betsey.

A Learning Experience

Anne calls forward Carie and Carol as her bottom two. Anne tells Carol her spring rolls were flavorless and notes that "the process doesn't seem to be getting any easier" for her. Because of that she sends her home. "I look forward to making dinner with friends," Carol says about using her new skills. "Maybe they'd eat around 10 pm, but after Champagne and wine, it wouldn't matter."

Leaving with Purpose

Bobby names Danielle and Amber as his bottom two. He says he had higher expectations because "we were all about flavor on this side." He ultimately decides it's time for Danielle to exit. "I'm just gonna stay on this track," Danielle says of her progress. "When my daughter's older, I know that I'll be able to cook for her and provide her with great meals."
