Pronunciation: [shihf-uh-NAHD; shihf-uh-NAYD]

Literally translated, this French phrase means "made of rags." Culinarily, it refers to thin strips or shreds of vegetables (classically, sorrel and lettuce), either lightly sautéed or used raw to garnish soups, salads and other dishes.
