1. Pommes dauphine (dauphine potatoes) are croquetteschoux pastry (cream-puff pastry dough) and forming the mixture into balls, which are then rolled in breadcrumbs and deep-fried. 2. Sole dauphine is an elaborate preparation of deep-fried sole fillets garnished with mushrooms, crayfish, truffles and quenelles.
