Pronunciation: [zhan-BAW<em>N</em> pehr-see-YAY]

A molded dish of strips or cubes of cooked ham and chopped parsley held together with a meat-wine gelatin. It is served chilled and, when cut into slices, resembles a colorful red-and-green mosaic.
