Sushi fanatics, this spot’s for you. Every Friday and Saturday night, chefs Grant Oura and Jayse Sato pop up with a BYOB sushi joint in the Vineyard Food Company in Wailuku. They offer cuts of fish beyond the typical maguro and hamachi — often, it’s seafood that they or their friends have caught that day. It’s not all raw; Sato handles more of the sushi, while Oura takes care of the cooked entrees. They don’t take reservations (pro tip: arrive early).
