Derek Kaplan of Fireman Derek’s Bake Shop & Cafe shares Miami’s local flavor, key lime. Derek got his start making key lime pies with his dad then selling them to local shops. He explains that the key lime is a much tarter lime, which gives key lime pie its nice sweet-tart flavor. He walks us through making a key lime pie, which starts with a graham-cracker crust. The filling includes condensed milk, egg yolks and key lime juice, which is made from about a pound-and-a-half to two pounds of limes. After the pies are baked they are then refrigerated for an hour to chill them, since they’re ideal when served cold. Derek tops off the pies with fresh whipped cream and Cuban coffee.
