A Colorful and Flavorful Rendition on Braised Bratwursts and Cabbage

For this week's Chopped Dinner Challenge, the chefs of Food Network Kitchen chose to feature the basket ingredient acai juice. The goal of this challenge was to use the juice of the antioxidant-packed South American berry to its full advantage, for its color and distinctive flavor. This recipe for Bratwursts with Sweet-and-Sour Cabbage uses the acai juice as the braising liquid instead of water or broth. By doing so, the juice not only lends a gorgeous purple hue, it also adds sweetness and earthiness that elevates this classic comfort food. Your family will love the eye-catching appeal and flavor of this dish.

First you'll want to heat a large Dutch oven. Add a little oil and sear the bratwursts all over until they're nicely browned. Set them aside until later.

Next, lower the heat and add the onion and fennel seeds. Season with salt and pepper, and cook until the onions are softened and lightly browned. Add the garlic. Then add the red cabbage and cook until wilted. Pour in the acai juice and the vinegar.

Finally, return the bratwursts to the pot, partially cover with a lid and cook on low until the cabbage is tender and the sausages are cooked through, about 10 to 15 minutes. Serve family style or divide among shallow bowls or plates.
