A Steak Recipe Inspired by Caesar Salad

For this week's Chopped Dinner Challenge, the chefs of Food Network Kitchen chose to feature the basket ingredient T-bone steaks. The goal of this challenge was to elevate average steaks with as much flavor as possible. Taking a cue from a classic Caesar salad, this recipe for Caesar T-Bone Steak with Stout Pan Sauce uses garlic and anchovies as a rub to bring umami flavor to the steaks. In addition, roasted fingerling potatoes and stout beer sauce round out the dish to make a complete meal that's packed with punch. Serve these steaks for a special weekend dinner with friends and family.
First, start off with the potatoes. Halve the fingerlings and toss them with 3 smashed garlic cloves, thyme, oil, salt and pepper. Roast them until they're golden and tender. Next smash the remaining garlic cloves with the anchovy fillets and a pinch of salt. Rub this paste on the steaks and season each with salt and pepper. Grill the steaks for about 8 minutes total for medium-rare.
To make the sauce, heat 1 tablespoon of butter in a saucepan. Stir in the shallot and cook for 3 minutes. Whisk in the beer, Worcestershire sauce and hot sauce. Simmer until it's reduced by half. Separately stir together the cornstarch with 2 teaspoons of water and add to the beer sauce to thicken. Whisk in the remaining 2 tablespoons of butter off the heat. Season the sauce with salt and pepper. Serve the steaks with the sauce and potatoes.
