Chopped Junior-Inspired Lunchboxes: Ham and Cheese Roll-Ups with Wasabi-Peach Sauce

Pretty much all kids love dip. If a food can be dunked into a sauce — ketchup, honey mustard, hummus or ranch dressing – then they're game! That’s why we were so happy to see one of the contestants on this week's episode of Chopped Junior elevate the world of dipping condiments with two of the mystery basket ingredients: wasabi and peaches.
Mix together 2 tablespoons of mayonnaise with 1/2 teaspoon each peach jam and wasabi paste.
And then make these super-dunkable Ham and Cheese Roll-Ups to go with it:
Lay out three 5-inch-long, thin English cucumber slices (they should bend easily). Then top each with a slice of Swiss cheese, a slice of ham and a small leaf of lettuce (we used green leaf). Roll each stack up to make 3 cylindrical rolls. Thread them onto a skewer and then cap the pointy end of the skewer off with an olive. Pack the sauce separately. Come lunchtime, dunk away!
