Chopped Junior-Inspired Lunchboxes: Pumpkin Hummus

food network 2015
On this week's episode, our young Chopped Junior contestants got into the holiday swing of things with Thanksgiving-inspired mystery baskets. So with pumpkin pie spice and rainbow carrots in mind, we threw together a fun autumnal hummus that kids can enjoy as a side or main dish for lunch.
Mix together 1/2 cup of plain hummus, 1/4 cup each 0 or 2 percent Greek yogurt and pumpkin puree, and a few shakes of your favorite hot sauce. Top with sliced scallions, a sprinkle of pumpkin pie spice and a drizzle of olive oil. Pack with rainbow baby carrots or carrot sticks for dipping.
Tune in Tuesday at 8|7 c to see which contestant wins $10,000. And keep coming back every Wednesday for a new recipe idea that will set your lunchbox apart from the rest, Chopped Junior style.
