Chopped Junior-Inspired Lunches: Watermelon with Toasted Coconut
Inspired by the mystery basket ingredients — watermelon pizza and coconut milk yogurt — on this week’s episode of Chopped Junior, we threw together a simple fruit salad in the test kitchen. It’s perfect for any brown-bag school lunch!
Just toss chunks of watermelon with a squeeze of lime juice and a pinch of kosher salt. Then toss with some toasted coconut, fresh mint leaves and cilantro leaves. Basil would be great too!
