Counting Down the 5 Quickest Spring Side Dishes Ever
Winter may have been all about comforting one-pot dinners, but spring is the time to dig yourself out of that rut by pairing main dishes with bountiful, seasonal sides — and fast.
On that note, we’re counting down the season’s best super-quick side dish picks. Each of them elevates whatever main dish they’re served beside, and they all come together in under a half-hour. How’s that for a weeknight?
25 Minutes: Healthy Broccoli Roman Style
Bring explosive flavor — while keeping things on the healthy side — to broccoli florets by adding panko breadcrumbs, lemon zest, garlic, white wine and chili flakes to the mix.
20 Minutes: Roasted Asparagus with Lemon Vinaigrette
Melissa d’Arabian’s simply dressed spears of asparagus may look the part of sheer elegance, but they’re incredibly easy to make. After roasting the asparagus to tender perfection, she tosses it with a simple lemony dressing that imparts big, bright flavor.
15 Minutes: Cheesy Mushroom Stacks
Smother portobello mushrooms with tomato slices, fresh mozzarella and breadcrumbs, then broil it all to bubbly goodness in no time.
10 Minutes: Tarragon Snap Peas
Snap peas are crunchy, sweet and addictively snackable all on their own, but the folks at Food Network Magazine recommend boiling them until crisp-tender for just a few minutes, then tossing with a dressing loaded with chopped fresh tarragon.
You can find five minutes to do anything and, if you’re smart, making this salad should be one of them. With juicy strawberries, crisp greens and a dressing of balsamic vinegar and strawberry jam on your side, time is not an ingredient you need to make an impressive salad.
