Now, this is a kind of steak that we crave come Meatless Monday. Instead of beefy chops, make vegetables the star of the meal, as Valerie Bertinelli does with this fuss-free dish featuring cauliflower from Food Network Magazine.

Her recipe for Roasted Cauliflower Steaks delivers results just as meaty as a traditional steak dinner, and, perhaps best of all, the process of cooking a cauliflower steak is nearly identical to the way you'd usually prep this hearty vegetable. "Instead of roasting cauliflower in little florets," Valerie explains, "cut it into steaks." That's it. Once the thick-cut cauliflower is tender and golden-brown after a quick roast in the oven, dress it up with a sweet-savory mixture of crunchy toasted pine nuts and buttery golden raisins for added flavor and texture.
