We've all been there: someone says, "marshmallow" and then all you can think about is toasting one over an open flame — and smooshing it between graham crackers and a mountain of creamy, dreamy chocolate. (You may even spend hours avoiding work and searching for recipes that can be made sans campfire, instead!)
I love a good, s'mores-inspired recipe as much as the next choco-holic but sometimes these no-campfire versions just aren't as satisfying as the classic (chocolate cupcakes and brownies ≠ melted chocolate). So, what do you do when you're craving s'mores but don't have plans to hang out around the fire? Try one of these alternate techniques. Sure, there are a few that stretch the definition of 'classic' (I'm looking at you, Frozen S'more) but all six recipes will reward you with crisp graham crackers, toasty marshmallows and soft, spreadable chocolate — with little to no additional ingredients.

On the Grill
When you're craving the Perfect S'mores, fire up the grill! The method is simple: top a graham cracker with a piece of chocolate and set it over indirect heat (a cooler part of the grill) so that the chocolate can melt while you toast your marshmallow. Then, layer everything together, top with another graham cracker and enjoy!

Simply fill graham crackers with rich chocolate fudge, toasted marshmallow ice cream (that you can make at home!) and fluffy, mini marshmallows.

The ultimate dessert hack: make seventeen s'mores at once using a muffin tin! Flip the tin upside down and tuck cinnamon-sugar tortilla rounds between the cups to create tiny taco shells. After they crisp in the oven, fill the shells with the essential ingredients (toasted marshmallows, milk chocolate and graham cracker pieces) to make Mini Taco S'mores.
