Banana Walnut Baked Oatmeal Cups

Ingredients

1 tablespoon coconut oil, melted, plus more for greasing

1/3 cup pure maple syrup 

1/4 teaspoon sea salt 

1/4 teaspoon ground cinnamon 

1 large egg 

1 3/4 cup unsweetened almond milk 

2 cups rolled oats 

1/2 cup walnuts, chopped 

2 ripe bananas, sliced 

1 tablespoon coconut sugar, for topping 

Directions

  1. Preheat the oven to 350 degrees F. Lightly grease a muffin tin with coconut oil.
  2. Whisk together the coconut oil, maple syrup, salt, cinnamon, egg and almond milk in a medium bowl until combined. Add the oats, walnuts and bananas and stir to combine. Pour into the greased muffin tin. Sprinkle the coconut sugar over the top and bake until the center is just set, 30 to 35 minutes.
