2 teaspoons coconut oil, for greasing the pan

1 1/2 cups black beans (that's one 15-ounce can, drained and rinsed)

1/2 cup quick oats (or regular oats will work, too)

1/3 cup pure maple syrup

1/4 cup coconut oil or vegetable oil

2 tablespoons unsweetened cocoa powder

2 tablespoons sugar

2 teaspoons pure vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

2/3 cup chocolate chips

  1. Preheat the oven to 350 degrees F. Grease an 8x8 inch baking pan with the 2 teaspoons coconut oil.
  2. Combine all of the ingredients except the chocolate chips in a food processor and process until completely smooth. Stir in the chips, then pour into the prepared pan.
  3. Feel free to sprinkle extra chocolate chips over the top (because who can ever get enough chocolate?).
  4. Bake the black bean brownies for 15 to 20 minutes, then let cool. Cut into squares.
  5. You can place them in the fridge overnight and they will firm up nicely.
