Breakfast Cereal Parfaits

Ingredients

Cereal:

2 cups buckwheat groats, soaked in water for 1 hour then rinsed and drained

1/2 cup pure maple syrup 

2 teaspoons ground cinnamon 

1 teaspoon kosher salt 

1/8 teaspoon pure stevia sweetener 

Apples:

2 apples, cored and thinly sliced

1 tablespoon coconut oil, in liquid form (not solidified) 

1 teaspoon pure vanilla extract 

1 teaspoon ground cinnamon 

Pinch of salt 

Cashew Cream:

2 cups cashews, soaked in water overnight then drained

1/2 cup pure maple syrup 

1/2 cup coconut oil, in liquid form (not solidified) 

1/4 cup fresh lemon juice 

1 teaspoon pure vanilla extract 

Pinch of salt  

Directions

Special equipment:
a food dehydrator with a nonstick drying sheet
  1. For the cereal: Place the groats in a medium bowl. Add the maple syrup, cinnamon, salt and stevia and stir to combine. Spread on a nonstick drying sheet on a dehydrator tray.
  2. Place the tray in the dehydrator and dry according to the manufacturer's instructions at 145 degrees until crisp, about overnight (times may vary depending on the machine). Alternatively, spread on a baking sheet lined with a silicone baking mat and bake at 200 degrees F until crisp, about 1 hour. Let cool. 
  3. For the apples: Toss the apples with the coconut oil, vanilla, cinnamon and salt in a medium bowl until evenly coated. Arrange the slices on a nonstick drying sheet on a dehydrator tray.  
  4. Place the tray in the dehydrator and dry according to the manufacturer's instructions at 145 degrees until softened, about overnight (times may vary depending on the machine). Alternatively, spread on a baking sheet lined with a silicone baking mat and bake at 200 degrees F until softened, about 1 hour. Let cool slightly. 
  5. For the cashew cream: Combine the cashews, maple syrup, coconut oil, lemon juice, vanilla and salt in a food processor and process until smooth.  
  6. For assembly: Layer the apples, cereal and cashew cream in jars.
