Broccoli Crust Pizza

Go breadless while adding additional veggies to your pizza by making it with a crust of broccoli and cheese. We promise it tastes just as good as normal crust.

Ingredients

1 head broccoli

2 eggs

1/2 cup grated Parmesan cheese

1 1/4 cups shredded mozzarella cheese

Salt to taste

1/2 cup tomato puree

1 tomato, sliced

Purple or black olives

Oregano 

Directions

  1. Cook the broccoli in boiling water for 4 minutes. Set aside for 20 minutes to cool.
  2. Preheat the oven to 350 degrees F. 
  3. Finely chop the cooled broccoli in a food processor. Pour the chopped broccoli into a bowl. Add the eggs, Parmesan, 1/4 cup of the mozzarella and a pinch of salt and mix well. 
  4. Spread the mixture on a nonstick baking pan, and bake for 20 minutes.
  5. Remove from the oven, spread the tomato puree on top and cover with the remaining cup mozzarella cheese. Top with the tomato slices, olives and oregano. Bake for 15 more minutes.
