Cauliflower Pizza

Ingredients

Crust:

2 cups chopped cauliflower florets

1/4 teaspoon smoked paprika 

2 tablespoons nutritional yeast 

1 garlic clove 

2 tablespoons olive oil 

1 tablespoon fresh oregano leaves 

Pinch of salt 

Tomato sauce:

1 cup sun-dried tomatoes, soaked in water overnight and liquid reserved

1 large tomato, cored and roughly chopped 

1 teaspoon crushed red pepper flakes 

1 tablespoon fresh lemon juice 

3 scallions, roughly chopped 

Toppings:

1 cup shiitake mushrooms, sliced

2 cups arugula 

1/3 cup balsamic vinegar  

Directions

Special equipment:
a food dehydrator with 2 nonstick drying sheets
  1. For the crust: Place the cauliflower in a food processor and process until finely ground, 30 seconds to 1 minute. Add the smoked paprika, nutritional yeast, garlic, olive oil, oregano and salt and pulse until well combined and the mixture comes together.
  2. Spread half of the mixture into a large round about 9 inches across on a nonstick drying sheet on a dehydrator tray, making sure not to spread it too thin. To make the second crust, repeat with the remaining mixture on another nonstick drying sheet. 
  3. Place the trays in the dehydrator and dry according to the manufacturer's instructions at 145 degrees F until crisp, about overnight. Alternatively, spread half of the mixture on each of 2 baking sheets lined with silicone baking mats and bake at 200 degrees F until crisp, about 1 hour. 
  4. For the tomato sauce: Combine the sun-dried tomatoes with some of the reserved liquid, the fresh tomato, red pepper flakes, lemon juice and scallions in a food processor and process until smooth. Add more of the reserved soaking liquid, as necessary, and process until the sauce reaches your desired consistency. 
  5. For the toppings: Toss the shiitakes with the arugula and vinegar in a medium bowl and set aside. 
  6. To assemble: Spread the tomato sauce on each crust and add the toppings.
