Chicken Satay with Peanut Sauce

8 ounces chicken breast, cut into strips

1 tablespoon curry powder 

1 clove garlic, grated 

1 tablespoon lime juice 

1/2 cup coconut milk 

Kosher salt  

Basic Peanut Sauce, for dipping, recipe follows

Basic Peanut Sauce:

3 tablespoons Massaman curry paste

1 1/2 cups full-fat coconut milk 

3 tablespoons chunky peanut butter 

2 tablespoons sugar 

2 teaspoons vinegar 

1/4 cup water 

Kosher salt 


  1. Combine the chicken strips, curry powder, garlic, lime juice, coconut milk and some salt in a bowl. Cover and marinate in the fridge for at least 1 hour.
  2. Skewer the chicken on 12 to 14 skewers and grill over medium-high heat until cooked through, 3 to 4 minutes per side.  Serve with the basic peanut sauce for dipping. 

Basic Peanut Sauce:

  1. Combine the curry paste, coconut milk, chunky peanut butter, sugar, vinegar and water in a saucepan. Season with salt. Stir well and simmer over medium heat until thickened, about 5 minutes.
