Chocolate Strawberry Muffins

Coconut oil, for greasing the muffin tin

1 cup unsweetened almond milk 

2 large eggs 

1/2 cup unsweetened applesauce 

1 teaspoon pure vanilla extract 

2 cups spelt flour 

1/2 cup dark cocoa powder 

1/2 cup coconut sugar 

2 1/2 teaspoons baking powder 

1/4 teaspoon sea salt 

1 cup fresh strawberries, diced 

1/2 cup dark chocolate chips 


  1. Preheat the oven to 375 degrees F and grease a 12-cup muffin tin with coconut oil.
  2. Combine the wet ingredients, including the almond milk, eggs, applesauce and vanilla extract in a large mixing bowl. Stir well with a fork until incorporated. 
  3. Stir together the dry ingredients, including the spelt flour, cocoa powder, coconut sugar, baking powder and sea salt in a large bowl. 
  4. Slowly add the wet ingredients to the dry ingredients and stir to combine. Fold in the strawberries and chocolate chips. Fill each cup of the prepared muffin tin about 3/4 full with the batter.  
  5. Bake until the muffins are springy on top, 12 to 15 minutes. Remove from oven and let cool.
