Crunchy Salad with Peanut Sauce

1 cup thinly sliced green cabbage

1 cup thinly sliced red cabbage 

1/2 cup shredded carrots 

1/4 cup chopped cilantro  

1/4 cup chopped scallions 

Basic Peanut Sauce, as needed, recipe follows

1 boneless skinless chicken breast, seasoned with salt and pepper, grilled and sliced 

1/2 ripe avocado, thinly sliced 

1/3 cup pineapple chunks  

2 tablespoons crushed roasted peanuts 

Basic Peanut Sauce:

3 tablespoons Massaman curry paste

1 1/2 cups full-fat coconut milk 

3 tablespoons chunky peanut butter 

2 tablespoons sugar 

2 teaspoons vinegar 

1/4 cup water 

Kosher salt 


  1. Combine the green and red cabbage, carrots, cilantro, scallions and peanut sauce to taste in a large bowl. Mix well and top with the grilled chicken, sliced avocado, pineapple chunks and crushed peanuts.

Basic Peanut Sauce:

  1. Combine the curry paste, coconut milk, chunky peanut butter, sugar, vinegar and water in a saucepan. Season with salt. Stir well and simmer over medium heat until thickened, about 5 minutes.
